Foods to Avoid for People with Swallowing Difficulties

Hard or Dry Foods


For individuals with poor chewing ability, hard foods are also considered difficult-to-eat foods. Eating these types of foods requires good chewing skills to break them down and mix them with saliva into a sufficiently moist food bolus for safe swallowing. Elderly individuals often experience a decline in chewing ability due to decreased muscle strength and tooth loss.

Sharp or Spiky Foods

Eating these foods requires effective chewing skills to break them down into soft, rounded, and moist pieces for safe swallowing.

Sticky and Tough Foods

Foods like meat, fish cakes, konjac, lotus root, and peanuts can be extremely difficult for elderly individuals with reduced saliva production or those with oral paralysis who cannot properly process food in their mouths. If these foods are not properly chewed into small pieces, they can scatter in the mouth, making chewing even more difficult. When swallowing, these foods may not form a cohesive bolus, making it hard to swallow and increasing the risk of aspiration (where food enters the airway instead of the esophagus).

Nutritional Recipe 1: Oyster Flavored Chicken Tofu

Ingredients: 2 eggs A small amount of chopped green onions. 1 piece of winter melon. 1 piece of kombu (dried seaweed) A small amount of job’s tears A small amount of lotus seeds. 1 piece of chicken 8-10 oysters

Instructions: 1. Rinse the kombu and cook it to make a kombu broth.

2. Use the kombu broth to cook the oysters for about 20 minutes, then remove and strain them. Set aside.

3. Cut the winter melon into small pieces. Add the cleaned lotus seeds and job’s tears to the kombu broth and cook until the winter melon becomes soft and tender.

4. Chop the chicken into fine pieces and mix with egg white to form a chicken paste.

5. Spoon the chicken paste into the kombu broth.

6. Simmer for ten minutes, then add the chopped green onions to finish.

Nutritional Recipe 2: Chawanmushi (Japanese Steamed Egg)

Ingredients: 2 eggs Soy milk or chicken broth (in a 1:2 ratio with the egg mixture) 2 crab sticks 2 tablespoons of mixed beans.

Instructions: 1. Crack the eggs into a bowl and mix with soy milk or chicken broth.

2. Use a spoon or strainer to remove any bubbles from the mixture.

3. Cut the crab sticks into small pieces and distribute them evenly along with the mixed beans into two bowls. Pour the egg mixture over them.

4. Cover the bowls with plastic wrap or aluminum foil and steam over medium heat for 10 minutes to finish.
